Tea Party Sandwiches

These tea sandwich recipes were inspired by my afternoon tea experience at Fortnum and Mason in London. I’ve tried several different combinations of ingredients and these have yielded the best results.

Cucumber Tea Sandwiches

Ingredients

1 large English cucumber, peeled and sliced very thinly
3/4 cup soft butter
2 teaspoons garlic powder
20 pieces thin-sliced bread
1 tablespoon fresh lemon juice
1 tablespoon olive oil
2 tbsp fresh dill, finely minced
3/4 cup cream cheese
Salt and pepper to taste

Directions

Let the cucumber slices drain in a colander. Combine the butter and garlic powder and apply to one side of 10 slices of bread. Combine the fresh dill and cream cheese and apply to one side of the other 10 slices of bread. Stir together the lemon juice, olive oil, pepper and salt in a bowl and add the cucumber slices so that they are well coated. Arrange the cucumber slices on a slice of bread with the butter and garlic spread and top with a slice of bread with the cream cheese and dill spread. Remove the crusts and cut diagonally or in quarters.

Smoked Salmon Tea Sandwiches

Ingredients

1 cup soft cream cheese
20 slices thin-sliced bread
1/4-1/2 cup capers (depending on your preference, I used them sparingly because I had some guests who were not fans of capers)
12 ounces thin-sliced smoked salmon
2-3 tbsp chopped chives

Directions

Mix chives with cream cheese and spead on one side of each slice of bread. Dot with capers and then arrange the smoked salmon on 10 of the bread slices. Top with the other 10 slices of bread. Remove the crusts and cut diagonally or in quarters.

Egg Salad Tea Sandwiches

Ingredients

20 slices thin-sliced bread
5 hard boiled eggs, diced
3/4 cup Mayonnaise
2 tbsp chopped chives
Freshly ground black pepper
1 tsp Horseradish sauce (optional)

Directions

Mix in the mayonnaise, horseradish (optional), pepper, and chives. Spread egg mixture on each slice of bread and top with the other slice. Remove the crusts and cut diagonally or in quarters.
